Casavecchia Extra Virgin Olive Oil

The first oil we’ve bottled to share beyond our own table.

For years our oil stayed here. On the long table, in the kitchen, in a bottle pressed into a guest’s hands as they left. This autumn, for the first time, we’re bottling it for anyone who would like some at home.

From our groves

From our own trees

Casavecchia has been farmed since the 12th century. The olives come from our own groves, [Pendolino, Moraiolo, Raggio and Leccino], growing on the slopes we look out on every morning. We farm the same land we live on. It tends to keep you honest.

The harvest

Picked by hand, pressed the same day

We pick in [late October and November], by hand, a few trees at a time. Within hours the olives go to [mill name], [a few kilometres] down the road, where they are cold-extracted, never warmed above 27°C. It’s slower. It’s also what keeps the oil green, grassy and alive.

This is a small harvest from a single estate. What’s in the bottle comes from here and nowhere else.

How it tastes

[Tomato leaf and artichoke, a gentle bitterness, then the peppery catch at the back of the throat that tells you it’s fresh.]

Use it raw, mostly. Over warm bread, white beans, grilled vegetables, a bowl of ribollita. It is at its best in its first year, so open it rather than save it.

A few questions

When will it arrive?

Bottles leave Casavecchia from [date]. You’ll hear from us when yours is on its way, with tracking. [Delivery usually takes X–Y working days in the EU and X–Y in the US.]

Keep it somewhere cool and dark, away from the stove, with the cap closed. The tin protects the oil from light. It is at its best in its first year, so open it rather than save it.

Of course. If you’re staying with us, ask and we’ll pour you some at the long table. [Tasting details to be confirmed.]

If you’ve stayed with us, you may already know this oil. If you haven’t, it’s a good way to begin. Either way, we hope it finds a place on your table.
